Stuffed peppers

I made stuffed peppers for dinner last night. I used a recipe as a guide and then went and did my own thing. They turned out really yummy, so I thought I'd post what I did. The proportions won't be exact since I don't generally measure when I'm cooking and not following a recipe.

10 oz Italian sausage
1 cup uncooked rice
2/3 cup chopped onion
3 cloves garlic, chopped
1 can Italian diced tomatoes, undrained
dash of balsamic vinegar
dash of celery salt
dash of pepper
4 medium bell peppers (I used green, red and yellow)
1 can (12 oz) tomato sauce with Italian herbs
Italian blend cheese

I cooked up the sausage, onion and garlic together with a little bit of butter while the rice cooked. I added the diced tomatoes, rice, vinegar, celery salt and pepper to the meat, onions and garlic in the pan I cooked the sausage mixture in. The peppers were cut open, seeds and membranes removed, and washed. I stuffed the mixture into the peppers and ended up with enough left over for another pepper (but only had 4, so I had to eat the extra stuffing while the peppers cooked). I put the peppers in a baking dish with a little bit of water in the bottom, which was probably unnecessary. I poured the can of tomato sauce over the peppers, covered them with foil so the steam would get trapped and help cook the peppers, and baked at 350 for an hour. I uncovered them, turned off the oven, sprinkled a little bit of cheese over the top and put back in the oven for 5 minutes to melt the cheese.

I look forward to eating my leftovers!

In other news, I am still waiting to hear back from shelters. It can take a little while to process applications. One usually takes two weeks or so and I submitted my application last weekend, so hopefully I will hear something from them soon. There are just so many dogs out there that need homes, but they want to put them all in the best possible home, so because I work and don't have any other dogs or a yard, that reduces the number of babies that I can apply for. I only require one, however, and I trust that the people who place dogs know what they are doing!

The peppers sound good. It has been a very long time since I made stuffed peppers.

Praying for the perfect match. Kinda like eHarmony - but the dog doesn't get to review you. Done by surrogate.

Mmmmmm. I am always looking for new recipes. I will have to give this one a whirl. Does Talia like sausage?

Well, at least you know God's timing is perfect. You will be very ready and so will your future doggy.

The orignal recipe I used calls for a pound of ground beef, so you can use that instead if Talia seems to like it better ;). I like the italian sausage because it has more flavor from the seasonings. I suppose one could use any ground meat they wanted to!

I have been praying for the right dog. The time I have for waiting is kind of a blessing since I need to do more cleaning before getting another dog!
